Culinary Arts Preparation and Training Program

The TAP Culinary Arts Inc. Program is a comprehensive, hands-on training initiative designed to equip students with foundational and advanced skills necessary for success in the culinary, hospitality, and maritime food service industries. TAP’s checklist provides a structured approach to assessing student competencies
across multiple learning outcomes, from food safety and kitchen operations to menu planning, workplace readiness, and culturally informed dietary practices. 

TAP’s checklist is aligned with each module’s learning outcomes and assessment criteria, offering a consistent method to evaluate student progress. Each skill or competence is rated according to three indicators:
‘Mastered’, ‘Needs Improvement’, and ‘Not Assessed Yet’. This framework supports instructors in providing
targeted feedback, identifying areas for improvement, and ensuring students meet industry-relevant standards.
Mastered – Check if the student has demonstrated competence.
Needs Improvement – Check if the student attempted but requires more development.
Not Assessed Yet – Check if the student hasn’t been evaluated on this yet. This is helpful for pacing
and tracking progress.

The use of TAP’s checklist contributes to our mission of delivering high-quality, credential-based culinary education that meets the needs of both learners and employers in diverse culinary settings, including land based and maritime environments.
TAP’s checklist also supports the continuous improvement of instruction and student engagement, ensuring all participants are workforce ready upon program completion. Categories that will be assessed includes:

Pre-Prep ServSafe Food Handler
✓ Teaches basic food safety, hygiene, cross-contamination prevention, and cleaning/sanitizing
essentials.
Pre-Prep ServSafe Allergen
✓ Covers major allergens, cross-contact prevention, safe food handling, and proper guest
communication.
Pre-Prep ServSafe Alcohol
✓ Focuses on ID checking, intoxication signs, alcohol laws, and responsible beverage service.
Pre-Prep ServSafe Food Protection Manager
✓ Prepares learners in full food safety management, contamination prevention, HACCP basics, and
compliance.
