Culinary Arts

We offer five courses to fit your needs and passions.

The six areas of instruction are:

  • Certified Breakfast Attendant
  • Certified Front Desk Representative
  • Certified Guest Room Attendant
  • Certified Kitchen Cook
  • Certified Maintenance Employee
  • Certified Restaurant Service

START Training provided by the American Hotel and Lodging Educational Institute (AHLEI)

The hospitality industry, specifically hotels need qualified entry level workers who have specific  skills, but do not have general knowledge about the hospitality industry. American Hotel and Lodging Educational Institute (AHLEI) offers six line-level training programs to give participants what they need to fill these positions.​

The AHLEI program is called START (Skills, Tasks, and Results Training).  The trainings are flexible and provide general hospitality knowledge, concise instructions on how to perform key tasks, and soft skills needed to succeed in a front-line position in hotel lodging.  At the conclusion of the training, participants will be required to take a certification exam and pass with a score of 70%. This certification gives participants a competitive edge over non-certified candidates.

Culinary Arts Training and Certificate

For participants who desire to enter the food service industry, culinary courses will be offered. The following culinary topics will be covered:

  • Sanitation and Safety and ServSafe Certification
  • Introduction to Culinary Arts
  • Nutrition and Food Preparation Essentials for Culinary Professionals
  • The Fundamentals of Cooking
  • Hospitality

 

Upon completion of the Culinary Arts training, TAP participants will given the opportunity to work with the TAP Feeding Program in which they will work on a team to prepare and deliver meals to agencies in which TAP has formed partnerships.  The purpose of this is to provide employment for participants and to provide on the job coaching and guidance to further enhance their skill set. The TAP Feeding Program also has the goal of providing healthy meals to program participants of organizations/agencies that have the mission of helping individuals. 

Referral to Mid- Atlantic Mariner Credential

Participants who wish to pursue careers on sea vessels may also be required to complete maritime training and secure their Merchant Mariner Credential (MMC).  TAP will refer participants to approved training schools to complete this requirement.  The local training school is Mid- Atlantic Maritime Academy; however, as the program expands, other training schools in various localities will be listed as resources for participants.

Seafarers Culinary Training and Certificate

For participants who desire to serve as chefs on yachts or dinner cruise ships and/or cooks on commercial and/or government sea vessels, the following additional courses will be provided:

  • Sea Decorum and Etiquette
  • Silver and Turn Down Service
  • Presentation and Activities

Catering/Restaurateur/Personal Chef

For participants who desire to start a catering business, in addition to the culinary courses, the following catering topics will be covered:

  • Catering Management and Special Events
  • Purchasing and Cost Control
  • Food and Beverage Management
